The right mortar, raked back to a sound depth and finished to suit the wall, so the stone stays breathable and dry rather than being sealed up in hard cement. Cement is harder than sandstone and does not breathe. It traps water in the wall and forces it out through the softer stone, which blows the face over time. Lime pointing is softer and breathable, so the stone lasts.
If the mortar is crumbling, has washed out, or is hard grey cement over an older wall, it is worth looking at. Open or failed joints let water in, so it is best not to leave it. We are happy to come and take a look.
By hand where the stone and joints call for it, so the edges of the stone are not damaged. A careful job keeps the arris of each stone clean, which matters on ashlar and dressed work.
